For Flashback Friday, I pay homage to the the delicious Estrella from Upland!

Tasting Notes – The Estrella was served hot in a wide, dark bowl topped with ground, sautéed chicken liver, sherry, rosemary and sage. The Estrella was cooked perfectly “al dente”. The chicken liver had a meaty texture and was deliciously flavored with the sherry, which added a rich, acidic flavor to the pasta. The fresh herbs provided texture. The components were harmonious. This was a meal highlight.
