Every once in a while, you have a meal so beautifully done, so soulfully delicious, that you ask yourself, Was I just really hungry… or was that actual culinary perfection? Sitting across from my husband at Ristorante Caffè Martini & Rossi, directly facing the Colosseum in all its golden-hour glory, I found myself leaning toward the latter.
This wasn’t just lunch. This was a moment.

After spending the day exploring Rome’s ancient wonders, we took a seat at this elegant, effortlessly stylish Roman restaurant. The setting alone was something out of a movie—white tablecloths, polished service, and a front-row view of one of the most iconic landmarks in the world. And then… the RIGATONI ALLA CARBONARA arrived.

Thick rigatoni, cooked perfectly al dente, was wrapped in the silkiest sauce made of egg yolks, pecorino romano, and a whisper of black pepper. The guanciale? Crisped to golden perfection, adding a rich, savory bite that somehow made the whole dish feel both indulgent and balanced.
Now here’s the part that shocked me— watching my CGM, I was fully expecting a post-pasta glucose spike. But it never happened. No crash, no correction needed. Just pure, blood-sugar-friendly bliss. Italy really is built different.
To start, we shared a Caesar-inspired salad, plated with delicate care: herb-grilled chicken, thinly sliced prosciutto, hard-boiled egg, Parmigiano Reggiano, and fresh greens dressed in a velvety house dressing. It was fresh, elegant, and a perfect warm-up.

Of course, when in Rome… you order pizza. The Margherita pizza was everything it should be—crisp, paper-thin crust with a soft interior, blistered edges, and the bright, clean flavors of tomato, basil, and mozzarella. Also CGM-approved.

Dining with my husband in the soft Roman light, sipping wine and savoring every bite, I realized it wasn’t just the food or the setting—it was the feeling. Ristorante Caffè Martini & Rossi captured the essence of la dolce vita: elegant, effortless, and unforgettable.
Whether I was starving from all the sightseeing or simply blown away by the flavor, let’s just say my plate was empty and my heart was full.
If you’re planning a luxurious Roman escape, do yourself a favor: make a reservation here. Order the Carbonara. Bring someone you love. And lose yourself in the magic of a meal that’s equal parts refined and romantic.
